Sugar Free Cheesecake

I wanted to make a sugar free cheesecake for certain members of my family for Christmas, so I scoured the net looking for a good recipe. I found a nice base recipe, then I tweaked a few ingredients to my liking.

The end result was a cheesecake that is lower in fat than most, and sugar-free.

It’s sounds nasty….I know.

But it’s so totally NOT nasty.

In fact, it is virtually impossible to tell that it’s sugar free and reduced fat.

I’m ashamed to admit this, but over the course of 2 days, I ate HALF of one by myself.

FROWN FACE.

Cheesecake.

It calls my name in soft, seductive tones.

 

Now…this recipe is made with Splenda. But, if you’re not watching your sugar intake, just sub the Splenda for actual sugar.

Artificial sweeteners kinda give me the heebie-jeebies. But if you CAN’T have sugar, they’re better than nothing.

 

Oh…..did I mention it’s SUPER DUPER easy to make?

It’s super duper easy to make.

 

Here we go…..

 

  • 2 8 oz packages of reduced fat cream cheese, softened
  • 1/2 cup of Splenda (or sugar….pick your poison)
  • 1 tsp vanilla
  • 2 eggs
  • 1 6 oz container yogurt of your choice (I used Weight Watchers brand….Caramel Spice Cake….I strongly recommend this flavor)
  • 1 9-inch graham cracker crust
  • 1 cup of whipped topping
  • 1/4 cup sugar free caramel ice cream topping

 

Preheat oven to 350.

Beat together on high speed cream cheese, splenda, vanilla, 2 eggs, and yogurt. Mix well.

Pour into graham cracker crust and bake for approximately 30 minutes.

Cool.

Spread whipped topping over cheesecake, then drizzle with sugar free caramel ice cream topping.

Voila.

You have now created a masterpiece that will whisper to you in soft, seductive tones and secure itself firmly to your thighs and midsection.

Be warned.

There is some sugar in the crust and whipped topping, but it’s a sparse amount. Make adjustments according to your needs.

Also….you can make your own crust if you like…but I so no likey to do this.

A nice variation would be to use blueberry flavored yogurt, and top the cheesecake with fresh blueberries.

Or strawberry yogurt and sugar free strawberry jam, whipped topping, and fresh strawberries on top.

You get the idea. Smile

 

Oh yes…..a nice tip for you…..this is one of those dishes that gets better the longer it sets in your fridge.
