Cleaner

I have been on a mission to eat cleaner. (Cleaner is my definition of healthier. A person can eat trashy food, or CLEAN food.) I have had a mild addiction to cheese pizza lately and I need to kick the habit.

Yesterday I went to the store and practically bought the entire produce section.

Not really, but I’m sure you get what I’m putting down when I say such things.

In my cart was the following:

3 butternut squash, 5 acorn squashes, red onions, fresh broccoli, 8 pounds of frozen broccoli, celery, carrots, green onions, zucchini, frozen corn, frozen mixed veg, beans (canned and dried), frozen mixed fruit, frozen blueberries, bananas, fresh parsley.

For dinner last night I made stuffed acorn squashes (totally vegan, BTW. And my 10 year old dubbed them delicious) and today I had a fruit and berry smoothie with my lunch which I made with almond milk.

For dinner tonight we had a big, beautiful dish of roasted vegetables.

I chopped half a butternut squash, 2 potatoes, 2 celery stalks, 2 carrots, and quartered half a large red onion. I tossed this all in a bowl with EVOO and balsamic vinegar. Baked for 30 minutes at 350 then added 1 chopped zucchini, chopped Portobello mushrooms, and fresh chopped parsley (these vegetables had been on stand-by in a bowl, soaking in EVOO and balsamic). I sprinkled everything with dried basil and a teensy bit of creole seasoning and then baked for another 30. Once fully roasted, I sprinkled on some salt and commenced to eating like the entire freaking dish. It was exceptionally delicious. My 2 year old adored it.

Oh yeah, I ate the veg alongside the leftover stuffing from the previous night. The stuffing was made with dried bread crumbs, red onions, celery, portobello mushrooms, vegetable broth, and …get this….canned pumpkin. It worked and it worked well. Trust me.

 

I would also like it to be noted that I spent an hour at the gym tonight.

I haven’t had any real exercise in longer than I care to admit, so the entire experience was rather glorious. I JOGGED. IT WAS FANTASMIC.

 

And that is all.

I’m off to clean and work on GOALS. Or maybe I’ll lay on the couch like a sloth and read my library book.

      Ummm…..I’m pretty sure you said the Lynn Austin books were before this one. The veggies look tasty and healthy. Good for you. I will be waiting on your response about Lynn Austin. :-)

      So…does your hubby watch the kiddos while you run? When do you run? You may have discussed those questions before, but I can’t remember and I’m too lazy to look it up.
      Those veggies look amazing. I WANT to eat like that. Like every meal…I imagine myself crunching on granola and drinking water for snacks…having oatmeal for breakfast…a salad for lunch and then delicious stuff like you post pictures of for dinners. That’s what I see in my head…
      Tomorrow is my shopping day. We’ll see if I can do better.
      You mentioned you have to shop for both your eating habits and your hubby’s…does that make your shopping bill out the wazzoo?

      I’m very quizzical this evening. :-) SORRY!!!

        I LIKE ALL YOUR QUESTIONS. :-)
        1. I think when I blog I must sound like this running, health-food nut. Like I’m a super healthy person that never eats fatty food and exercises religiously. THIS IS SO NOT THE CASE. I only blog about healthy food and running because those things are important to me, and I try very hard to abide by my little self “rules”. But I do fall off the healthy bad wagon from time to time.
        2. Hub rarely watches the kiddos for me when I want to get exercise. If I am really feeling like I need to get moving, I do one of two things. A.) Take the munchkins to the daycare area at the rec center (but I can only do this if Spud goes in with Tater to help keep him happy, or the worker is paging me to come get Tater out of her hair), or B.) I take him to my mom or sister. I do not like taking him to my mom or sister to watch on a regular basis, cuz well, they have lives and he’s not their responsibility. SO….I don’t get as much exercise as I would like AT ALL because it’s just too difficult to do when you have kids. I’m sure you understand this. :-)
        The daycare at the rec is something I have just started utillizing for Tater, and it’s working pretty well. So maybe I’ll be able to get more exercise from now on.
        3. I run when I feel good, when my food is thoroughly digested, and I’m not feeling like a lazy slug. For awhile I was getting up really early in the morning to run, while my mother watched Tater. I was on a running schedule, and I did really well with this. But, I run “better” in the evening. I am not now, nor have I ever been, a morning person.
        I haven’t been running at all the past few months, but once I get started again I’m sure I’ll stick to evening runs.
        4. When I say “run”, what I should be saying is “jogging”. I jog. I do not just haul ass and RUN. I would likey die if I tried to do that. :-)
        5. Morgan is, fortunately, very open-minded about eating healthier foods. This is something that he has developed with age and maturity. He will eat a healthy meal I put in front of him (for example: last night I served roasted vegetables again and vegan split pea soup, and he ate and even liked it). BUT, if he desires meat, or junk food (and he desires these things a lot), generally he will go purchase something and either him or I will cook it. He likes to cook, so it’s not like he is going out and buying and preparing meat cuz his strict vegetarian wife won’t cook it. :-) Not the case. (Though, admitedly, I have grown to be fairly grossed out by meat in general). I’ll make a meat dish from time to time, like a lasagna, and the hub and kids gobble it up. But mostly, I like for my kids to eat a vegetarian diet. And, If I don’t make a point in telling Spud he is not eating meat, he doesn’t even notice. Morgan eats whatever he wants…I don’t try to force vegetarianism on him. Though I do give him a hard time about eating a lot of crap food.

        Geez, I probably could have put all of that into a blog post. :-)

      I need to immediately start eating this and nothing else, just this, until I undo all the Christmas damage I did to myself.
